500 grams mince
500 grams sausage meat
1 cup breadcrumbs
1 tablespoon parsley (chopped)
1 egg
2 onions
1 desertspoon curry powder
salt and pepper
1/2 cup of milk
1/2 cup of water
*Combine altogether and shape then place into a roasting dish
SAUCE
1/2 cup water
1/4 cup worcester sauce
2 tablespoons vinegar
1/2 cup tomato sauce
1/4 cup brown sugar
1 teaspoon instant coffee
25 grams butter
2 tablespoons lemon juice
*Combine all in a pot, bring to the boil and simmer for 5 minutes. Pour over meatloaf and bake for 1 1/2 hours at 180 degrees.
1 lb. ground beef
1 pkg. taco seasoning mix - alternatively season with 1 tsp each, cumin, ground corriander, small pinch of cayenne pepper/chilli powder to taste, black pepper, cloves of garlic, mixed herbs.
1 (8 oz.) can chopped tomato or passata sauce
1 (15 oz.) can chilli beans or tin of baked beans if you don't have any in the cupboard
6 flour tortillas
2 c. shredded Cheddar cheese
2 c. shredded Mozzarella cheese
Brown meat and drain grease. Stir in seasoning mix, spices, tomatoes and beans.
Arrange tortillas between layers of meat and sauce sprinkling some cheese ontop of meat before adding the next tortilla . Repeat layers so that you finish with a sprinkle of cheese ontop of final tortilla and bake at 350 degrees for 30-40 minutes or until bubbling and golden.
Serve with salad, potato wedges or some steamed veggies, very yummy
